Earlier this year I made the decision to start living a healthier lifestyle. I had always been a pretty healthy eater , but I got really serious about my diet and the way I was eating.
I have been doing more food posts on my Instagram lately and they have been getting a great response. So, I have decided to start incorporating more healthy meal ideas on the blog each week.
I normally do smoothie bowls or just pain ol' smoothies for breakfast during the week, but these vegan waffles topped with raspberries and bananas were pretty yummy. I LOVE the 1915 drinks in the morning or with a mid morning snack. 1915 juices are totally organic and NON GMO. SO delicious. A lot of people were asking me where I get them, and I always find them at my local grocery store in the produce section on a shelf.
These banana split smoothie bowls are my favorite! I blend up my smoothie just like I would for a normal smoothie bowl, but I half a banana and top with nuts, chia seeds, flax seeds, nuts, coconut, and some fresh fruit. Amazeballs!
My go-to snack a few times a week is super simple and healthy. I cut up some carrots and have them with a small bowl of hummus.
I love rice and veggies. I had a left over veggie kabob from the weekend. It had zucchini, yellow squash, onion, red peppers, bell peppers, and mushrooms. I just cooked it up and placed it over rice with some homemade soy sauce.
Friday dinners, if I am at home, will pretty much always be something a little more junky. I love Mexican food (I am from the west coast) . I made some vegan nachos with brown rice, beans, vegan "chicken" , corn, tomatoes, jalapeno's, avocado, and salsa. Still healthy, but not something I would normally eat during the week,
